The Simplest and Tastiest Cake in the World!
I like to keep things simple, but also tasty! I’ve included this recipe because it is just that: it is tried, it is simple, it is good! Basta, no more needs to be said, other than enjoy – preferably with the three Cs: coffee, company and conversation.
Serves however many, depending on slice size... (or just me, as I loooove cake!)
200 g butter, plus extra for greasing
200 g sugar, plus extra for dusting. (could go less, but I need some sweetening!)
200 g (1 1/3 cup) tipo 00 flour, plus extra for dusting
1 teaspoon baking powder
pinch of salt
a few drops of vanilla extract
2 apples, peeled and diced
1 teaspoon cinnamon (optional)
Preheat the oven to 180°C. Grease a large loaf tin with butter and dust it with flour.
Beat the butter and sugar using a wooden spoon. Once combined, add the eggs and continue to beat until smooth. Now gently fold in the sifted flour, baking powder, salt and vanilla extract.
Add the apple to the mixture along with the cinnamon (if using).
Pour the mixture into the tin and sprinkle additional sugar on top.
Bake for 35–45 minutes, depending on your oven. When a skewer inserted into the middle of the cake comes out clean, it is ready.
Serve, preferably warm, with an espresso.
